Cooked, Oren Ambarchi’s gutsy and ambitious new album, was recorded and mixed over three years, three continents and five countries, with a thirteen-strong cast of musicians lending shō, whistling, portative organ, along with instruments taken from the world of jazz and beyond. Such an aggregation might suggest that the two pieces comprising the album are overripened, that Ambarchi and co. might have been high on their own supply. And yet Cooked is as finely balanced as a champagne cascade.
